Gluten-Free, GAPS, Gut Healing...etc, etc,...

I've been scouring the web looking for info.  The kids will be arriving home this weekend and I'm gearing up for big changes around here.   I've been diving back into Nourishing Traditions, checking out the GAPS diet, looking at tons of gluten-free recipes, and percolating.  I've got my first couple of batches of kombucha brewing and some beet kvass ready to store in my fridge as well.  I'll also be lining up an appointment for Eva with Dr. Gleixner as soon as she gets home, apparently our supplemental health insurance will cover 80% of the cost up to a certain amount each year, YAY! 

I'm not sure how difficult this is going to be, I do know that the change will not be fun at first, especially after coming back from grandma's house, a processed/refined food nightmare (I try not to think about it).  I'm thinking about school lunches, I'll have 3 in school this year.  I'm thinking about all the food available at school from breakfast club to halloween, christmas, and valentine's parties, to birthday cupcakes sent in by other moms.  How will I deal with all this?  I'm considering having the school freezer stocked with a few cookies and other healthy treats for those unexpected treat days if possible.

I managed to remain off gluten since the fat flush (gained back 10 of the 15 I lost with dairy and min. sugar added back LOL...but that's another journey) as has Marc so we have been allowing the kids to clean our house out of all the leftovers, blatent and hidden. Its getting to be slimm pickings around here so I'm going to have to do some baking and bread making and condiment creating soon. :)

    I was going to recommend Spunky coconut but I see you've already found her :) Looking forward to checking out the other link! I imagine it will be easier, like Lydia, because you guys LOVE to cook and bake. Me, not so much, so relearning is a bit of a chore for me. But I do feel for you..the school thing will be a bit of a challenge I'm sure.

    Marc is all stoked about fermentation and told me to go check out body ecology. I think he's more excited than me!

  2. Fun times! I've just set out my first 3 jars of pickle experiments...I'll let you know how it goes. My kids love pickles so if I can figure out some fermented ones they'll eat I'll be really happy. I'm going to get some ginger beer going too, that stuff is so good and I haven't made it in ages. I think we should start a big group gluten free bread experiment where we all try some recipes and ideas and see what we can come up with!
